Chicken meatloaf recipe
Ingredients
- 2 beaten eggs or ½ cup Egg Beaters®
- ¾ cup skim milk
- 2/3 cup whole-wheat bread crumbs
- ¼ cup finely chopped onion
- 2 tbsp. fresh chopped parsley
- ½ tsp. dried sage, basil or oregano, crushed
- 1 tsp. salt
- 1/8 tsp. black pepper
- 1½ pounds ground chicken
- ½ cup low-sugar ketchup
- 1 tbsp. Splenda® Brown Sugar Blend
- 1 tsp. ground mustard
Directions
- Combine eggs and milk in a bowl. Stir in the bread crumbs, onion, parsley, sage, and salt and pepper. Add meat and mix well. Lightly pat mixture into an 8x4x2-inch loaf pan.
- Bake in a 350° oven for 1–1¼ hours or until internal temperature registers 160°F.
- Combine ketchup, brown sugar blend and mustard in a bowl; spread over meat. Bake for another 10 minutes.
- Let stand for 10 minutes before serving.
