Oatmeal cookies recipe
Makes 48 cookies
Ingredients
- ¾ cup applesauce
- ½ Splenda® Brown Sugar Blend
- ¼ cup Splenda® Sugar Blend
- 1 tsp. baking powder
- ¼ tsp. baking soda
- ½ tsp. ground cinnamon
- ½ cup Egg Beaters®
- 1 tsp. vanilla extract
- 1¾ cups whole wheat flour
- 2 cups rolled oats
Directions
- Beat the applesauce, brown sugar blend, white sugar blend, baking powder, baking soda and cinnamon in a large bowl using an electric mixer until combined. Scrape the sides of bowl occasionally.
- Add egg and vanilla and beat until combined. Add in as much of the flour as you can with the mixer. Stir in any remaining flour and the oats.
- Drop dough by rounded teaspoons 2 inches apart onto a greased cookie sheet. Bake in a 375° oven for 8–10 minutes or until edges are golden.
- Cool on cookie sheet for 1 minute. Transfer to a wire rack.
