Chickpea salad recipe

Makes 2 sandwiches 

Ingredients

  • 1 15-ounce can chickpeas, drained 
  • Mayonnaise to taste 
  • 1 tbsp. fresh cilantro or chives 
  • Salt and pepper to taste 
  • Bread or pita pockets 

Directions

  1. Mash chickpeas in a bowl using a fork or dough cutter.
  2. Add mayonnaise and seasonings of choice. Mix until the consistency is like chicken salad. 
  3. Put into toasted pita pocket or on bread. 
  4. Add lettuce, tomato, cucumber and/or shredded carrots.
